Atkins Diet Recipes: Low Carb Butter Cream Frosting (IF)

In partnership with FaveDiets ( http://www.FaveDiets.com ) recipe site, I knew I had to release this recipe when asked to make a birthday cake. Any good birthday cake features a frosting on top of the cake, and this recipe is as good as any higher carb cousin.

Ingredients 1/2 cup Heavy Cream 1/2 cup Butter 1 cup equivalent of Liquid Splenda, or powdered granulated Splenda 1 tsp Vanilla extract 1/2 tsp Xanthan gum 1 oz of Cream Cheese Serves 10 slices Nutrition Facts per Serving: 129 Calories, 14,2g Fat, .4g Total Carbs (0g Fiber) , .6g Protein

Atkins Diet Revolution Rolls: 3 eggs, separated 3 oz Cream Cheese 1/4 tsp Cream of Tartar 2 tsp Splenda Salt, dash

Makes 6 servings Bake at 300 degrees for 35-55 minutes Nutrition Info: (per serving) 90 Calories, 7g Fat, 6g Protein, .5g Carb.

here are most likely problems with the recipe:

1. Mixing or beating (not folding) the Egg Whites into the Yolks / Cream Cheese

2. Not beating the egg whites long´╗┐ enough (weak peaks) or no cream of tartar

3. Potentially not cooking the buns long enough or too long

4. Letting bits egg yolks in your egg white bowls

This recipe works well as a take off for other ideas like French Toast (add cinnamon) or other tweaks.

Atkins Diet Recipes: Low Carb Enchiladas and Faux Spanish Rice (IF)

In partnership with FaveDiets ( http://www.FaveDiets.com ) recipe site, I realized I have already posted a video on enchilada chicken, but that one was flavored with a commercial sauce. This recipe features a sauce derived from a recipe originally posted on Linda's Low Carb recipe Site. (http://www.genaw.com/lowcarb/red_enchilada_sauce.html) I made this recipe earlier this week using it with low carb tortillas, but I wanted to offer an option even for those on Induction.

With that in mind, I adapted my faux fried rice recipe to make it more Mexican, and it really features the flavors. I might suggest adding a cup of chicken broth to the rice initially to further increase the flavor.

Ingredients: 2 TBS oil 1 small onion 3 cloves garlic 3 tablespoons chili powder 2 tsp Ground coriander 2 tsp Cumin 1/2 tsp salt 3 tsp Splenda, or liquid equivalent 16 oz Tomato sauce

Makes 2 cups

Nutrition Info: (1/4 cup) 43 Calories; 3g Fat, 5g Carbs (1.5g Fiber), 1g Protein

Atkins Diet Recipes: Low Carb Chocolate Mousse

Here's a recipe to try for those people outside the first two weeks and can have coconut. This recipe came from Jennifer Eloff recipe that she posted on her blog, and was made courtesy of her. I reduced and changed the sweetener amounts slightly to lower the total carbs and reduce the sweetness.

Ingredients: 8 oz Cream Cheese 1 1/4 cup coconut milk 1/2 cup Granulated Splenda 1/4 cup Truvia (6 packets) 1 tsp Xanthan Gum 1/3 cup cocoa powder 1/2 oz unsweetened dark chocolate, thinly sliced

1. Beat cream cheese thoroughtly in food processor. 2. Add coconut milk, mix well. 3. Add remaining dry ingredients, pulse until smooth and scrape the sides as needed. 4. Finely slice the dark chocolate, and sprinkle over top. Chill or eat immediately.

Makes 5 servings.
