In partnership with FaveDiets (http://www.favediets.com/meats ) recipe, I was requested by one of my International viewers (Austrian) to make one of her family favorites low carb-style. Using the same type breading and coatings that I use with chicken strips, this was a pretty easy conversion. I asked her what style wiener schnitzel she wanted – pork or the more traditional veal. She opted for the pork version, and I was more than happy to oblige.
1.25 pounds tenderized pork cutlets
Dash Salt Dash Black Pepper
1 cup Parmesan Cheese 1/4 tsp Cayenne Pepper
1/2 tsp Paprika
1/2 cup Heavy Cream
1 cup Pork Rinds, crushed
Makes 4 Servings.
