Breakfast will never be complete without the pastries where you can glaze it with your favorite spreads be it peanut butter or strawberry jam. As for the moms who enjoy preparing snacks for their kids who go to school, they can even spice it up by adding slices of banana over peanut butter or whip cream in the strawberry jam. Zucchini Nut Roll is one of the Atkins breads that can also make a great muffin.
Ingredients: vegetable oil spray
1 cup Atkins Quick Cuisine bake mix
1 cup almonds
1 cup sugar substitute
1 ½ teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
½ cup vegetable oil
4 large eggs
1 medium zucchini
1 teaspoon vanilla extract
1. Raise the oven temperature to 350F. Grease an 8 by 4 loaf pan with vegetable oil spray.
2. Whisk together the bake mix, almonds, sugar substitute, cinnamon, nutmeg, salt, baking soda and baking powder in a large bowl. In another container, mix the oil, eggs, zucchini and vanilla extract.
3. Mix the zucchini mixture into try ingredients until they are all combined. Pour the batter into a pan. Bake it for about 45 minutes until its color will turn to golden brown.

Garlic Toast Crisp is one of the Atkins breads where it is best served for crumbling into soups.
Ingredients: vegetable oil spray
4 tablespoons extra virgin olive oil
2 tablespoons garlic
2 cups Atkins Quick Cuisine bake mix
1 tablespoon baking powder
½ teaspoon salt
1 cup club soda
2 large eggs
1. Raise the oven temperature to 350F. Coat the 8 by 4 pan with vegetable oil spray.
2. In a microwave- safe cup, place the olive oil and garlic. Leave it for 1 minute until the garlic turns golden brown.
3. Combine the bake mix, baking powder and salt in a bowl. Add the club soda, eggs and tablespoon of garlic oil. Mix it until well- combined. Transfer the dough to a prepared pan, smooth the top and bake it for about 45 minutes.
4. Let it cool for 20 minutes in a wire rack. Set the oven temperature to 400F. Cut the loaf into 20 thin slices. Place it on an ungreased baking sheet and brush both corners with garlic oil. For 14 minutes, bake it until golden brown in color.
